FRIED RICE
Hi lovelies, I hope you all had a lovely Christmas? Well, I did, with a lot to eat and drink too.
I didn't forget you guys, I never would and that's why I have a sumptuous meal to share with you all from the Christmas party today. If you were to guess, what would it be? oh yes, it's everyone's favourite Fried Rice, Salad and Chicken.
Most people think of Fried Rice as a very palatable delicacy, I mean, just think of a nice pot of bright yellow rice with as many mixed veggies as required, prawns chopped liver meat and mouth watery spices plus salad and chicken if you desire.
WHAT YOU NEED
Uncooked rice (any quantity of your choice)
Water
Mixed veggies (carrots, peas, green beans, sweet corn)
Onion bulbs
Scotch bonnet (pepper)
Vegetable oil
Chicken/fish/meat
Liver
Prawns
Spices (cubes of Maggi, salt, all-purpose seasoning, curry, dried tyme)
Fresh ginger
Fresh garlic
LET'S GET STARTED!!!
Step 1: wash your chicken into a pot.
Step 2: Add some spices which includes, cubes of Maggi to taste, slices of diced onions, blended onions/Scotch bonnet(pepper) /ginger and garlic if you desire. Lastly, add salt to taste and allow to steam for a while before adding some water.
Step 3: Add some oil into a frying pan and apply low heat.
Step 4: When the oil gets reasonably hot, add cooked chicken into the pan and allow to fry, turning each side till the mixture turns brownish.
NOTE: This is for those that love their chicken fried, it can be grilled in the oven or eaten after it has been boiled, I choose the frying method for today.
Step 5: parboil some cups of rice by adding the rice into a pot of water and allow to steam.
Step 6: pour out the hot water from the rice after parboiling and wash with cold water.
Step 7: Drain the water from the rice with a sieve and keep aside.
Step 8: boil your chicken stock and add more spices (salt, curry, Maggi, pepper) If necessary. You want the rice to be bright yellow so be sure that it has the right quantity of curry spice.
NOTE: It is advisable not to add too much chicken stock or excess water, the chicken stock should be equal to the quantity of rice so that the rice is not too soft.
Step 9: Add the parboiled Rice with prawns(optional) into the pot of steaming chicken stock and allow to boil until the rice gets dry.
Step 10: In a separate pot, steam the diced liver meat and add some salt, pepper and Maggi cubes to taste.
NOTE: I boil the liver meat separately from the chicken because the stock from the liver meat can make the fried rice have a dull colour.
Step 11: Pour a little vegetable oil into a pot and allow to get hot on a medium heat.
NOTE: It is advisable not to add too much oil, just a very little at a time so that the rice doesn't look too oily in the end.
Step 12: Fry diced liver meat
Step 13: Pour some mixed veggies and diced onions into the hot pan of oil and stir.
Step 14: Add the bright yellow rice in bits into the hot pot of oil and stir until the mixture looks shiny.
Step 15: Finally include the diced liver meat and stir again
Serve hot or warm with salad and Chicken if you desire.
