POTATOES
This is a starchy vegetable and part of the nightshade family (Solanaceae) amongst tomatoes, peppers, eggplants etc. Potatoes have been in the world for thousands of years.
Over time, different potato species has been discovered and produced in many parts of the world.
This vegetable could be baked, fried, boiled or mashed. It is healthy and highly nutritious, containing potassium, copper, vitamin C, dietary fibre etc.
Potatoes can be used as a substitute for plantain or yam and it takes quite some time to get ready, one has to be sure that it is well cooked by piercing a fork through the potato to know if it is soft and ready for consumption.
Babies also enjoy this highly nutritious meal when it is properly mashed and served cool

PLANTAIN
Plantain is a starchy food which can be used as a vegetable, even though it belongs to the banana family (Musaceae) they are both used differently. For example, unlike bananas, plantains can not be eaten raw. This vegetable contains vitamin A, which enhances skin complexion and helps the visual circle, it also contains Magnesium which strengthens the bones and Potassium which controls heart rate and blood pressure.
However, plantains could be either ripe or unripe and these most times determine its usage. A lot of people prefer to fry/ roast the ripe plantain and boil/cook the unripe (like potato and porridge), but again it all depends on individual choice.

PASTA
This is a noodle made from an unleavened dough and formed into varieties of shape examples are spaghetti, macaroni, lasagne etc. This starchy food contains minerals like magnesium, calcium, zinc, iron and potassium. The good thing about pasta is that it is very quick and easy to prepare. It could also be used with the variety of sauces ranging from stew sauce, mixed peppers sauce, mayonnaise with salad and any other kinds of sauce all depending on one's creativity. It could also be used as porridge (Jollof), this is achieved by mixing any sauce of your choice together rather than serving your sauce as a dish side. However you like it, pasta is always a palatable meal.
