COCONUT RICE


Coconut rice is a delicious kind of rice made by cooking parboiled rice with coconut milk.
Even though this food is very nutritious and delicious too, a lot of people find it stressful to make. This is because of the process of buying a good coconut, breaking the coconut, taking it out of its shell, grating it and then extracting its milk with the use of warm water a sieve and a bowl.
The good news is, all that stress has been taken care of by modernisation. Simply go to the market and get a tin of coconut milk and be saved from some stress. However, this recipe covers both ways of getting coconut milk for coconut rice.

What you need

1)   One Medium sized coconut or 2Tins of coconut milk.
2)   4 cups of rice
3)   One kg of Chicken
4)   6 seasoning cubes
5)   2 scotch bonnets
6)   A teaspoon of Tyme
7)   A teaspoon of curry powder
8)   One onion bulb
9)   Ginger (optional)
10)  A Tablespoon of Crayfish
11)  Water
12)  Salt
13)  Sunflower oil

How to Make Coconut Rice


1)  Wash 4 cups of rice in cold water,  pour into a pot of water and leave to parboil. It's parboiled when it starts bubbling.
2)  Break coconut,  take it carefully out of its shell, grate and extract the milk with warm water and a sieve.  Or simply buy 2 Tins of coconut milk. 
3)  Wash chicken and add Tyme, curry powder, salt, sliced onions, blended ginger and scotch bonnet to it.
4)  Allow chicken portions to boil on medium heat until it produces its own stock, afterwhich some water be added. 
5)  When chicken gets soft, grill in an oven or deep fry with hot oil (optional).
6)  Pour coconut milk into a pot, add some chicken stock, a Tablespoon of Crayfish, one blended scotch bonnet and 2 seasoning cubes. To get some curry powder flavour and look, and a teaspoon of curry 
7)  Taste the mixture in number 6 and determine if salt is needed. 
8)  Allow the mixture to boil on medium heat.
9)  Pour rice into the boiled mixture. The rice should be slightly beneath the milk and stock combination to prevent the rice from being too soft or too hard.
10) Add 2 tablespoons of sunflower oil to make the rice shinny. This is optional. 
11) Add some mixed veggies if desired and serve.
