PUFF PUFF

Any Nigerian party without puff puff is probably a get-together 😃. Funny enough, this is an obvious fact about most Nigerian parties, in fact, the absence of puff puff as part of the small chops can ruin a wonderful event with unhappy faces. It is everyone's delight, both old and young.
However, we can simply say, puff puff is a delicious deep fried African snack made of flour, yeast, sugar, nutmeg, salt etc, it's golden brown on the outside and whitish inside when deep fried in hot oil.

What you need to make puff puff

  1. 250 grammes of self-raising flour
  2. 2 teaspoons of active yeast
  3. Half teaspoon of nutmeg (optional)
  4. 5 tablespoons of granulated sugar
  5. Half a cup of luke warm water
  6. Sunflower oil/vegetable oil/olive oil
  7. 3 pinch of salt

How to make puff puff

  1. In a clean bowl, pour all measured dry ingredients (flour, salt, yeast, nutmeg, sugar) and mix thoroughly.
  2. Pour half a cup of lukewarm water to the mixture and mix with a mixer or with a clean hand. The batter should not be hard neither should it be too watery but somewhere in between hard and watery. see picture below.
  3. Cover the mixture tightly with a foil paper or cling film. 
  4. Cover the mixture again with a cloth. This is to make the puff puff really warm and rise well.
  5. Put the mixture in an oven or a very warm place and allow it to rise for 1-2 hours.
  6. Take out the mixture after the 1-2 hours and get ready to deep fry.
  7. Pour enough oil into a pot and allow to get hot on medium heat, High heat would make the puff puff ready on the outside but uncooked inside.
  8. When the oil gets very hot, use an ice cream scooper or a clean hand to carefully scoop the batter.
  9. Drop the scooped batters carefully into the oil. Do not over crowd the oil with puff puff, fry in batches.
  10. Allow them to deep fry until the lower part of the puff puff becomes golden brown.
  11. Flip the puff puff upside down with a frying spoon so that the upper part can be fried too.
  12. When all part of the puff puffs are golden brown in colour, take them out with a frying spoon and place them on paper towels. This is to drain excess oil.
  13. Preferably, enjoy the puff puffs hot
