SUYA


Hi dearies, this is a recipe for the very delicious Nigerian suya. Suya is a delicious roasted beef mixed with spices to give it a delicious aroma and flavour. In Nigeria, suya is sold mainly at night and I still remember how lots of people queue waiting for their turn to buy the yummy snack to enjoy a beautiful night.

What you need

  1. Boneless beef
  2. Suya mix/spice
  3. One onion bulb
  4. 2 seasoning cubes
  5. Half cup of sunflower/vegetable/olive oil 
  6. Dry pepper
  7. BBQ skewers (sticks)
  8. Tomatoes (optional) 
  9. Cabbage (optional) 

How to prepare 

  1. Slice beef thinly or ask a butcher for assistance.
  2. Wash beef and set aside.
  3. Add any of the oil above and mix with seasoning cubes.
  4. Use a soft brush to apply the oil mixture to the meat.
  5. Insert the meat into the stickss.
  6. Pour some suya mix into a plate and thoroughly apply it to the suya, covering all sides.
  7. Cover the meat mixture with a cling film and leave to marinate for 30 minutes in the fridge. 
  8. Preheat oven for 5 minute.
  9. Place stick meat on the oven rail and leave to get ready for 15 minutes. 
  10. Flip meat to the other side for another 15 minutes.
  11. Check that meat is properly grilled by having a taste.
  12. Serve suya preferably on a newspaper with onions, dry pepper, tomatoes and cabbage if desired.
