RICE WITH MINCED MEAT SAUCE
WHAT YOU NEED
- 3 cups of rice
- Minced meat (500 grammes)
- Mixed peppers (green, yellow, red)
- One large onion bulb
- One tomato puree(200 grammes)
- 4 Seasoning cubes
- All purpose seasoning
- Salt to taste
- 2 Scotch bonnet (fresh pepper)
- Half cup of Sunflower oil
- Ginger to taste
- Mixed veggies
- Dried thyme and Curry powder
HOW TO PREPARE
- Parboil some white rice in a pot of water until it begins to bubble, get rid of excess starch by pouring out the water from the parboiled rice (using a sieve) and washing the rice with cold water.
- Add salt and some water (slightly above the rice) to the empty pot together with the parboiled rice and cook the rice until the water gets dried up. If the rice is too hard, add some more water.
- When the rice is nearly dried up, add some mixed veggies if desired.
- Pour half a cup of oil into a pot and leave to preheat on low heat for 3 minutes.
- Add tomato puree, diced onions, grated ginger and diced fresh peppers and stir on low heat until the puree no longer has a sour taste.
- Add Seasoning cubes, all-purpose seasoning, dried thyme, curry powder and whatever seasoning desired.
- Pour mince meat to the mixture and continue to stir until mince colour turns from pink to brown.
- Taste for sweetness, salt may be needed or more seasoning, add as required.
- Add chopped mixed peppers, and take down the pot from the cooker.
