FRIED RICE
Hello everyone, it's been a while since I last dropped a recipe here, more than a year, I hope I get pardoned for my very long absence, it was due to circumstances I had no control over.
Anyways, I have some juicy posts which I preserved in my long absence. One of them is the very delicious fried rice. This is actually an upgraded version to my previous fried rice recipe, I hope you enjoy the upgraded version as much as I do.
WHAT YOU NEED
Chicken/Turkey
Prawns
Mixed Veggies
Vegetable oil/Sunflower oil
Rice
Seasoning (Thyme, curry powder, seasoning cubes, ginger, scotch bonnet, all purpose seasoning, salt)
HOW TO PREPARE
1 Wash and par boil 4 cups of rice and set aside.
2 Wash Chicken or Turkey with water, season with the above seasoning to taste and leave to boil adding water after it has produced its own stock.
3 Take the Chicken/Turkey out of the pot after it must have boiled for about 30 minutes to an hour. The boiling time depends on the kind of Chicken (soft or hard) just be sure that the Chicken/ Turkey is soft enough and well cooked.
4 Allow the Chicken/Turkey stock to boil for a while making sure that it is up to taste. If it isn't tasty enough, you may add a liitle more seasoning to achieve the desired taste.
5 Add parboiled rice to the boiling stock. the stock should only be slightly above the rice, you don't want it over cooked.
6. Allow the rice to cook until the stock get dry. Set aside afterwards.
7. In a clean dry pot pour desired oil, allow to pre heat and fry Chicken/ Turkey until golden brown. Set aside afterwards.
8. In another pot or frying pan add alittle quantity of oil and fry cooked liver/prawns until golden brown and then fry the mixed veggies afterwards.
9. Add cooked rice in batches to the Mixed veggies and stir together.
10.Serve as desired, see pictures.
