BEANS AND PLANTAIN PORRIDGE

Today's post is on beans and plantain porridge. Now, just a little question on beans, have you ever noticed the difference in the taste between brown and white beans? Or the amount of time it takes them to soften? If you haven't noticed yet, brown beans are by a mile sweeter,  some people call it sweet beans. It takes a shorter time to soften brown beans unlike white beans known as Black-eyed beans. The challenge with brown beans is its cost, it's actually more expensive in the Uk than white beans. So when next you want to buy any of them have these at the back of your mind. CURRY CHICKEN

Hey lovely followers, let me tell you of my first encounter with Curry Chicken. So I was done with my hair and needed some food, a Jamaican restaurant was the closest to me so I decided to give their curry chicken a try. It had lots of vegetables, had a lovely aroma and tasted really delicious, it was the best meal I had had in a long time. With that, I set out to make my homemade curry chicken. Below is my recipe, I hope you love it as I do. PALM OIL/NATIVE RICE

Hello readers, today I will be sharing with you all how to make palm oil rice (also known as native rice). What makes this rice mixture different from others is the use of palm oil and the addition of ingredients like crayfish, locust bean (Dawa Dawa) and dried fish.                               You need  Raw rice (in this case 800 grams)  3 pieces of dried fish  1 and a half tablespoons of locust bean  2 scotch bonnets (pepper)  A cup of palm oil  Chicken/Meat/Fish Stock  2 Bulbs of Onion  A handful of Chopped Scent leaves Bullion cubes and salt (optional)  3 Tablespoons of blended crayfish                           How to Prepare  Parboil rice until it starts to bubble. Drain hot water, wash with cold water and set aside. FRIED RICE

Hello everyone, it's been a while since I last dropped a recipe here, more than a year, I hope I get pardoned for my very long absence, it was due to circumstances I had no control over. Anyways, I have some juicy posts which I preserved in my long absence. One of them is the very delicious fried rice. This is actually an upgraded version to my previous fried rice recipe, I hope you enjoy the upgraded version as much as I do. WHAT YOU NEED Chicken/Turkey Prawns Mixed Veggies Vegetable oil/Sunflower oil Rice Seasoning (Thyme, curry powder, seasoning cubes, ginger, scotch bonnet, all purpose seasoning, salt) HOW TO PREPARE 1 Wash and par boil 4 cups of rice and set aside. 2 Wash Chicken or Turkey with water, season with the above seasoning to taste and leave to boil adding water after it has produced its own stock. 3 Take the Chicken/Turkey out of the pot after it must have boiled for about 30 minutes to an hour. JACKET POTATO

The jacket potato is one easy, and nutritious meal you can make at any time. To think that I just discovered this meal a few months ago is quite funny. All my life, I have always peeled the skin of my potato before cooking, but with Jacket potato, you can enjoy a crispy skin and soft flesh potatoes. What you need Large Potatoes Sunflower/olive/vegetable oil Salt Baking tray   Sides may include Baked beans Cheese Salad  How to make  Wash and put potatoes in the microwave for 20 minutes. Take out potatoes from the microwave and puncture them gently with a knife, this is to allow penetration of salt. Preheat oven for 3-5 minutes on 220C. Rub salt and oil around potatoes and put them on a baking tray. Bake potatoes for 20-25 minutes turning them around occasionally. When all parts are golden brown, bring out potatoes and enjoy with any or all of the above sides. See pictures below.  

DOUGHNUT

Hi readers, as always, I love to try something new, so I set off to make some doughnuts for the weekend and it was so delicious, we all loved it. Below is my recipe. What you need  300 grammes of flour One large egg 2 spoons of butter 3 tablespoon of Sugar 1/4 teaspoon of salt Sunflower/vegetable/olive oil 2 teaspoons of dried yeast 100 ml of milk  How to make doughnut  1. Pour milk into a clean bowl.  2. Add dried yeast and mix thoroughly.  3. Add Sugar, salt, egg and melted butter to the mixture and continue to mix.  4. Add flour and mix with hands until all the ingredients are well incorporated.  5. Cover though with a clean film and leave to rise in a very warm place for 45 minutes to an hour.  6. Bring out the dough afterwards and roll well on a clean surface with the aid of a rolling pin.  7. RICE WITH MINCED MEAT SAUCE

Hi, lovelies. This meal is similar to my last post but has a slight twist to it. It is delicious and highly nutritious too. WHAT YOU NEED 3 cups of rice Minced meat (500 grammes) Mixed peppers (green, yellow, red) One large onion bulb One tomato puree(200 grammes) 4 Seasoning cubes All purpose seasoning Salt to taste 2 Scotch bonnet (fresh pepper) Half cup of Sunflower oil  Ginger to taste Mixed veggies Dried thyme and Curry powder HOW TO PREPARE Parboil some white rice in a pot of water until it begins to bubble, get rid of excess starch by pouring out the water from the parboiled rice (using a sieve) and washing the rice with cold water. Add salt and some water (slightly above the rice) to the empty pot together with the parboiled rice and cook the rice until the water gets dried up. If the rice is too hard, add some more water. SPAGHETTI WITH MINCE MEAT SAUCE

Hey, lovelies here is a quick, easy and nutritious meal, I call it spaghetti with mince meat sauce, feel free to give yours a different name. What you need Spaghetti (one pack) Mince meat (500 grammes) Mixed peppers (green, yellow, red) One large onion bulb Tomatoes Seasoning cubes Salt Scotch bonnet (fresh pepper) Sunflower oil  Ginger Cheese How to prepare Pour half a cup of oil into a pot and leave to preheat on medium heat for 3 minutes. Chop some tomatoes, dice one onion bulb, grate some ginger and dice one or two fresh peppers. Pour the mixture in number 2 into the pot of hot oil and stir. Add Seasoning cubes, all-purpose seasoning and whatever seasoning desired. Pour mince meat to the mixture and continue to stir until colour turns from pink to brown. Taste for sweetness, salt may be needed or more seasoning, add as required. Add chopped mixed peppers, and take down the pot from the cooker. PIZZA

Hello everyone and happy new month. During the week, I made plans to buy pizza for my family but then I thought to myself why not make it yourself? So, I set out to make my yummy pizza. Pizza is from Italian origin, it's made up of a flat round base of dough with toppings of cheese, mixed peppers, meat or fish, pepperoni, tomato stew etc. What you need to make pizza 1. 350 grams of all purpose flour. 2. A teaspoon of sugar. 3. A levelled teaspoon of salt. 4. 2 teaspoons of Yeast. 5. 4 tablespoons of olive oil/ sunflower oil. 6. 100 -120 ml of water. 7. SUYA

Hi dearies, this is a recipe for the very delicious Nigerian suya. Suya is a delicious roasted beef mixed with spices to give it a delicious aroma and flavour. In Nigeria, suya is sold mainly at night and I still remember how lots of people queue waiting for their turn to buy the yummy snack to enjoy a beautiful night. What you need Boneless beef Suya mix/spice One onion bulb 2 seasoning cubes Half cup of sunflower/vegetable/olive oil  Dry pepper BBQ skewers (sticks) Tomatoes (optional)  Cabbage (optional)  How to prepare  Slice beef thinly or ask a butcher for assistance. Wash beef and set aside. Add any of the oil above and mix with seasoning cubes. Use a soft brush to apply the oil mixture to the meat. Insert the meat into the stickss. Pour some suya mix into a plate and thoroughly apply it to the suya, covering all sides. Coconut rice is a delicious kind of rice made by cooking parboiled rice with coconut milk. Even though this food is very nutritious and delicious too, a lot of people find it stressful to make. This is because of the process of buying a good coconut, breaking the coconut, taking it out of its shell, grating it and then extracting its milk with the use of warm water a sieve and a bowl. Funny enough, this is an obvious fact about most Nigerian parties, in fact, the absence of puff puff as part of the small chops can ruin a wonderful event with unhappy faces. It's another weekend guys and people who know me well can guess that the weekends were made for me. On these days, I try to do something new or different. Today, I decided to make Groundnut (Peanut) stew. Even though this is not totally new to me, it's not an everytime kind of thing. Finally, it's weekend guys!!! Having had a stressful week, I know we all look forward to the weekend to unwind a little and get fuelled for next week's activities. OGBONO SOUP

Ogbono soup is no doubt one of Africa's finest delicacies, it is made from ground ogbono seeds and used as a thickener. One of the most fascinating things about this delicious soup is its slimy nature which enables the ogbono soup to go up, down and around a small ball of hand moulded eba/fufu  (swallow) ready to be swallowed. Variety they say is the spice of life and indeed it is. Imagine a nice plate of white rice with a lovely sauce different from the usual tomato stew, wouldn't that wow minds and water mouths? One of Africa's finest is the ofada sauce usually eaten with ofada rice. The name ofada is from Ogun state in Western Nigeria where the brownish rice was first cultivated by a soldier who allegedly smuggled it from Asia. The ofada rice and ofada sauce are usually a must have in many parties in Western Nigeria. However, we can not all wait for a party to enjoy this delectable sauce; so why not bring the party home?
